At 10:30am this morning, I started caramelizing two pounds of onions. Unemployment rocks! Okay, actually, is doesn't rock. I'd rather be working, but since I'm not why not spend some time in the kitchen? The onions were sitting on the counter practically BEGGING me to caramelize them. I HAD NO CHOICE.
Actually, there is method to this onion madness. I'm going to attempt to recreate an Amy's No Cheese pizza tonight for dinner. I've got a whole wheat Boboli pizza crust, and I've caramelized the onions. All I need now are the veggies, and we'll be set.

I often sauté do a bunch of onions at a time (in water, usually with garlic) and then freeze them in 1/2 cup or 1 cup mason jars to throw into soups and stirfrys. It's just as much work as cooking a few, right?
