Wednesday Night Dinner: Scallops with Creamed Corn and Tarragon

Tracy posted a recipe yesterday that sounded absolutely amazing, but since it contained ingredients that the boy-fiance can't eat, I had to file it away for an evening when I'd be flying solo. And then! As I'm sitting in the grocery store parking lot listening to a message from the boy, I discover that I will be flying solo for the evening! The grocery store even had fresh corn and scallops. I love it when the stars align like that.

The only thing the store didn't have was micro greens. I subbed a couple sprigs of parsley instead. Next time though, there will be micro greens. And, oh yes, there will definitely be a next time.

On a somewhat related note, I love that fall is quickly approaching (though we just seem to be getting summer here), but I hate that I'm losing daylight so quickly in the evenings. It's a lot harder to take pretty photos of my dinner by the nasty overhead kitchen lights. Time to break out the flash and test it out with the new camera!
