It's my favorite time of year again. That's right, it's Satsuma time! By far, my absolute favorite citrus for eating. Easy to peel, a little bit tart, a little bit sweet, and NO SEEDS. I ask you, what more could you want from a citrus fruit?

I also ask, why is it that every single pumpkin pie recipe I've ever made makes more filling than will fit in any pie crust? It's like that hot dog and bun thing, you just can't win. And the pre-baking the crust thing...it throws me for a loop every time. No matter what I do, the crust shrinks, which doesn't help with the whole filling thing. Due to a number of other complications I won't go into now, I've made the decision to bring a pumpkin cheesecake next year. I'm much better with cheesecake.

i have a solution for you..."impossible pumpkin pie". it was my mom's default every year...and it's CRUSTless! i'd be happy to email you the recipe...easier than cheesecake for sure.

Well, I think pumpkin cheesecake sounds delightful. Although, the photo might not illicit as many warm memories as the one you have posted today.



If you want I can send you my mom's recipe you don't prebake the crust and it always fits in my deep dish pie plate with no extra batter.
