Salad Days

Yes, yes, I know it's hot. I know you don't even want to THINK about turning on the stove to make something for dinner. Ice cubes? You're going to have ice cubes for dinner? Talk about lack of nutritional value... Well yes! I know they're cold! I'm sure we can think of something cold that might provide more sustenance...how about a salad? Salad is cold! You don't know what to put in it? You're out of salad dressing? Bah! Excuses, excuses...

This is what we had for dinner tonight:

Simple Salad
(aka It's Too Hot to Turn on the Freaking Stove Salad)
Serves 2

1 head of red leaf lettuce (washed and torn into bit sized pieces)
3 medium sized tomatoes (seeded and cut in chunks)
1 large red pepper (large dice)
1/4 of a red onion (large dice)
1 avocado (cubed)

Dressing:
1T balsamic vinegar
2T Olive oil
Salt and pepper to taste

How easy is this:
Place all salad ingredients in a large bowl. Mix dressing. Put dressing on salad. Toss everything together. Serve.

Perfect for a Sunday evening when it's 8pm and still 85 degrees out! And you'll probably have room for some sorbet for dessert.
